I think it is still best to put on thermostat on it. It helps maintain the temperature to your desired heat. Also, it helps monitor if your external oil cooler is still working properly.

I have a sandwich plate that I bought from BAT enterprises that goes between the oil filter and the block. It has a built in thermostat and works well. I know some people don't like them but it seems to work great for me, I just check to make sure it's tight every so often. I don't have a temp gauge yet but the water temp has been significantly lower since I put in the oil cooler
