I keep a rag tucked next to the seat and drive with one hand

Usually the air moving through the car keeps the windows unfogged reasonably well once moving. Around the pit and grid, it can get pretty foggy.

I use the anti-fog stuff and really do keep a rag in the car with me. My heater/blower etc is long gone and I'm still trying to get the car to weight with an 89 chassis and my 250 LBs of lean muscle.

Ah,
The Hans Stuck method... I saw him doing that at sebring back in 95 in a Turbo 993. Fun stuff.

I have heard of rubbing soap on the window for that but thought it was an old wives tale. Kind of messy too.

Back to the dash.... I thought I'd keep playing with this and see where it goes, after, all it's just my time so far.
This weights 7 lbs 4 oz.

I cut all the brackets out to lighten it up, made a template for the gauge opening and cut one out of sheet stock.

I still have a bit more to go and plan on some flange holes in the back side of the dash to lighten it up further. At this point it weights 5 lbs 11 oz.
That's 1 lb 9 oz lighter, so far.
